Bruce Parks brings more than 40 years in the foodservice industry to everything we build. In 1981, he opened Sacramento's very first coffee house, helping introduce a whole community to the craft and culture of great coffee long before it became mainstream.
Bruce's expertise runs deep. He received advanced training directly from Dr. Ernesto Illy of Illy Caffè, one of the most respected names in the coffee world. That rare, firsthand education shaped his exacting standards for flavor, quality, and consistency — the same standards that guide every batch brewed through our system.
To turn decades of coffee knowledge into a reliable, real-world product, Bruce partnered with Brian Schyberg, a Cal Poly graduate and licensed mechanical engineer. Brian brought the technical precision and disciplined problem-solving needed to build something truly dependable.
Together, Bruce and Brian designed, built, and rigorously tested multiple prototype brewers. They refined every detail — from performance to durability — until the system met both Bruce's uncompromising taste standards and Brian's engineering benchmarks.
