Ingredients

For the cold brew:

  • 1 cup (100g) coarsely ground coffee — a medium-dark roast deepens the caramel and spice notes beautifully
  • 4 cups (1 liter) cold, filtered water — clean water means a brighter, smoother brew

For the spiced brown sugar syrup:

  • ½ cup (110g) packed dark brown sugar — for that rich, molasses-kissed sweetness
  • ½ cup (120ml) water
  • 1½ teaspoons ground cinnamon — or 2 cinnamon sticks for a smoother, more aromatic infusion
  • ¼ teaspoon ground nutmeg
  • ⅛ teaspoon ground cloves — just a whisper for warmth
  • 1 pinch fine sea salt — to make all those flavors pop

For serving:

  • Ice cubes
  • Milk, cream, or your favorite plant-based alternative, to taste
  • Optional: a cinnamon stick or sprinkle of ground cinnamon, for garnish

Substitutions:

  • Swap dark brown sugar for light brown sugar if you prefer a milder, less molasses-forward sweetness.
  • No brown sugar on hand? Use coconut sugar for a deeper, caramel-like note, or maple syrup for a cozy autumn twist.
  • Trade the ground spices for a pre-mixed pumpkin spice blend (about 1¾ teaspoons total) for one-step warmth.
  • Use oat or almond milk for a naturally creamy, dairy-free finish.

Instructions

Brew the cold brew

  1. Grind your beans coarse. Aim for a texture like raw sugar—this keeps your brew silky and free of grit.
  2. Add the grounds to the brewing chamber of your Ho Tai Cold Brew System, spreading them into an even layer.
  3. Pour in the cold filtered water (unless your using our Ho Tai Harmony which has its own water filter allowing you to use water straight from the tap) slowly, making sure every ground is fully soaked. No stirring necessary, as the water flow will do the trick.
  4. Plug-in your system and watch your Ho Tai Cold Brew System go to work. Let it circulate the water and steep the coffee for 3-4 hours for a deep, well-rounded base of concentrated cold brew.
  5. Lift out the center chamber (unless your using the Ho Tai Harmony which has its own spout) to separate your concentrate from the grounds-no messy straining, thanks to the clever Ho Tai design.

Make the spiced brown sugar syrup

  1. Combine the syrup ingredients. In a small saucepan, stir together the brown sugar, water, cinnamon, nutmeg, cloves, and salt.
  2. Simmer gently. Set over medium heat and bring to a low simmer, stirring until the sugar fully dissolves—about 3–4 minutes, until the syrup looks glossy and smells deeply fragrant.
  3. Cool completely. Remove from the heat and let the syrup cool to room temperature. It will thicken slightly as it rests. (If you used cinnamon sticks, fish them out before storing.)

Build your glass

  1. Fill a tall glass with ice. Pour in equal parts cold brew concentrate and cold water (or milk for extra creaminess).
  2. Add the spiced syrup. Drizzle in 1–2 tablespoons of the spiced brown sugar syrup, adjusting to your sweet tooth.
